Yoigokochi Sake Importers was established in the Netherlands in 2008 by academically trained Japan specialists. Their aim is two-fold: conveying the message of the pure sake movement to European shores and getting quality sake out of the Japan ghetto into the wider culinary world. They only deal with 100% pure rice wine, without additions of alcohol, sugar, taste-, aroma- and colour-enhancing elements, and have presented sake in Europe in all its variety and depth. Medieval and pre-modern sake, minimally polished sake, unstrained sake, long-matured sake etc have been introduced in Europe by the company, and most of their collection consists of unpasteurized, unfiltered and undiluted sake. They have successfully linked to the Western culinary world and have been warmly welcomed by the natural wine world.
Dick Stegewerns, associate professor at the Dept. of Culture Studies and Oriental Languages, University of Oslo, is the sake selecter at Yoigokochi Sake Importers. In this (non-academic) seminar he will introduce you to the main characteristics of sake (in comparison to wine), brewing method, various types, history, introduction to the West, etc.
The seminar is open to anyone interested and will take place on Wednesday 24 June, from 15:00 until 16:30 at the conference venue, room 22.0.47.
